Super fragrant! It's hard to say exactly what they taste like but kind of like a cross between a mango and banana with a fermenty finish. </div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">Q: How do I eat them? What is their texture? </div><div class="separator" style="clear: both; text-align: left;">A: You slice them in half and grab a spoon. Their flesh is similar to a thick yogurt.</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">Q: How do I know if they are ready to eat? <br />A: Pawpaws are like a banana in that they yellow then turn black with ripeness. Usually you know a pawpaw is ready when they drop off the tree but due to food safety rules we do not pick up dropped fruit. We harvest them as soon as they have a little give when squeezed. So shoppers take them home and let them ripen on the counter. </div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">Q: Do they have seeds? </div><div class="separator" style="clear: both; text-align: left;">A: Yes, a few large brown seeds in the shape and size of lima beans. </div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">Q: What can you do with them? </div><div class="separator" style="clear: both; text-align: left;">A: Eat them fresh is how they're usually eaten. And lastly, brewers can add them to beer. I am still learning and do not have all of the answers. Are you growing yours in the shade? <br />A: It's true, PawPaws are an under story tree. However, we grow them in the fields just like the peaches and apples. This means they need a lot of water. We grow them on landscape fabric with drip running underneath. Cooking....sometimes it's a drag....especially since I don't have a dishwasher in my house so there's a daunting pile of dishes post cooking that haunts me...usually until the next day....or let's be real...the day after. So I try (try being the key word here...like 9 Sundays out of 10) to hang on to a schedule. </div>

Sweet Sunday afternoons...the meal prep sweet spot. This past Sunday I was staring into the freezer and staring into my mostly empty, aside from a case of seltzer, clementines, and a mix and match of various beers, hard ciders, and wine (priorities people!) and felt fussy. My chicken hadn't defrosted and I was like, now what?!? As I shifted the seltzer I saw some forgotten zucchini I bought a week ago (see farmers have to do that grocery shopping grind during the winter too) and it basically glowed gold. Yassss! A sweet CSA member bought me a veggetti years ago so zucchini noodles with peanut soy dressing it was. Exceptional in taste, fun! (turning zucchini into noodles is extremely satisfying!) and all in all took 1 pan and about 15 minutes to make. </div>

Circling back to my 9 Sundays out of 10 for meal prep....programs like CSA's can be a great part of your weekly schedule, a Saturday shopping ritual preparing you for Sunday meal prep and a solid accountability partner to keep you eating/cooking local, fresh, and healthy. </div>

So if you're not familiar with our CSA system we have a Market Style system where you come to a farmers market or our cute little Purple Farmstand and shop from what we have that week and record what you spent. This is subtracted from your account...like a debit type account.<br />

<li>Give you an added bonus for signing up. For example if you pay in $100, your account actually starts at $112. Fun right?! </li>
<li>We let you shop when you want to and spend you account as you would like. </li>
<li>Give your a complimentary bunch of flowers each month....because flowers make everything better</li>
<li>Let you use your account toward U-Pick Apples (yes! Peaches this year and Apples!) </li>

When I think of the bulk of the best sweet treats from the farm I think of summer: peaches, watermelon, berries, etc.<br />
<br />
I wanted to show the fall a little love too by highlighting our fall fruits: apples, pawpaws, and quince.<br />
<br />
The second two most people have never seen or eaten and the first is literally everywhere.<br />
<br />
PawPaws are the nation's largest native fruit and are similiar to a banana in taste, and how it ripens. They also turn an appealing shade of black when they're really ripe. I said they tasted like bananas but really a cross between bananas and mangos with an avocado texture.<br />
<br />
Quince are so beautiful. I just like the way they look! As far as taste they are tart...like a lemon tart. They are used to make quince paste, candied quince, mixed in as a companion to apples in Apple Pie and I recently saw a quince up-side down cake on pinterest. I'm intrigued and will probably be testing that recipe.<br />

It just never gets old to me that liquid egg whites can be turned into delicately sweet clouds. I had meringue on the mind and ripe peaches just picked from the orchard in hand so it was an easy choice to combine them. </div>

This is a super quick crowd pleaser of a recipe. </div>

3 ripe freestone yellow peaches, cut in half and pit removed (this recipe serves 6, if you need more than 6 you'll need additional batches of meringue)</div>
<div>
1 1/2 tsp brown sugar, separated 1/4 tsp per peach</div>
<div>
1 batch of meringue (use any recipe you'd like online but make sure you get the order correct or your meringue will not get those stiff peaks! egg whites and cream of tartar first with pinch of salt...then sugar)</div>

Simply slice your peaches, remove pit and place 1/4 tsp of brown sugar where the pit was. Place sliced peaches on the baking sheet and bake at 375 for 10 minutes. </div>

While they're in the oven make your meringue. </div>

When you bring the peaches out of the oven let them sit for 5 minutes, then use an ice cream scoop with a release or two spoons to pile that meringue sky high. Put pillow topped peaches back in the over until the meringue browns. </div>

Serve warm or these store pretty well in the fridge over night. </div>

August is exhausting, mesmerizing, frantic, more humid than hell's sauna on the 4th of July, and filled with new arrivals to the tailgate table. Fascinating I think is the best way to describe Daniel Stone's book, "The Food Explorer, The True Adventures of a Globe-Trotting Botanist Who Transformed What America Eats."<br />

We never (or at least I never/rarely beyond my farm) give much thought to where things we eat daily originally came from. We are in the age of everywhere. We can get anything from almost anywhere and quickly. Break it down one more step and most people never consider (especially with processed food...yes a farmer literally grew/raised your bacon, egg and cheese sandwich on a bagel) the farmer that planted the seed, planted the tree, cared for the plants, harvested the food, packed it in a box and sent it either to the grocery store or processing facility. Unless you shop a farmers market then you know and chat and see the person that does all of the above mentioned things.<br />
<br />
<br />
And what we really don't think about is how these things got to America in the first place. However Stone looks into the life of the man who dedicated himself completely to bringing out-of-towners to America and man, did he deliver!<br />
<br />
Stone opens the book by saying, "A few years ago, it occurred to me that the same way immigrants came to our soil, so did our food." Shortly after that quote he introduces us to David Fairchild who with the help of a wealthy acquaintance, Barbour Lathrop, traveled literally around the world and back to bring us things like lemons, avocados, nectarines, mangos, watermelons, and more!<br />
<br />
For the the time period it amazes me how far and wide these two men traveled. I've been to a fraction of the places they went to and even more impressive it was a time when travel was much less comfortable and far more difficult since you know...they couldn't just pull open their laptop and search for the cheapest flights in a matter of seconds.<br />
<br />
In stark contrast from today where 1-2% of the population farms, "In America's infancy, food wasn't a sector - it was almost the whole economy. Farmers accounted for 90 percent of the United States labor force in 1790. Fifty years later, they were only 60 percent and a generation after that, they were just over half (today they're less than 2 percent). Accounting for America's swelling population during that time, from four million to thirty-one million, there were more individual farmers in the late nineteenth century than ever before (or again) in American history."<br />
<br />
The book takes you through Fairchild's ambition to get approval of the Department of Agriculture for his journey to bring new food to America. He said, "As a botanist you can help farmer solve problems with their current crops, or you can bring them new crops, the seeds to start rival industries."<br />
<br />
By far my favorite part of the book was when he'd make a discovery. I loved when Stone wrote of Fairchild's time in Peru, "Red corn and yellow squash filled the seed sacks that Fairchild prepared for Washington. Both were uncommon varieties with few redeeming traits - but the colors were novelties, good for, if nothing else, attracting bemused onlookers in pavilions of agricultural fairs."<br />
<br />
Alligator Pear. I sincerely wish that name would have stuck. But sadly no we're stuck with avocado, which on a funny note is a, "derivative of their (Aztecs) word for testicle. It grew in pairs, and had an oblong, bulbous shape." Alligator pear is what Fairchild called it when he observed our beloved avocados for the first time.<br />
<br />
"Fairchild's avocado shipment from Chile helped launch an industry." And if you ever wondered why or where we got "Haas" avocado it's because a guy who's last name was Haas patented, "the variety that would become the world's most popular avocado, accounting for more than 80 percent of the global market."<br />
<br />
Stone writes about Fairchild hearing about and finding a seedless grape variety which even more than the grape it's self he was interested in the idea of seedless fruit and ease of eating.<br />
<br />
Fairchild not only discovered food but also brought to the United States a new type of cotton.<br />
"This new cotton, he learned, was known as Joannovitch cotton. It was easy to grow and its seeds were easy to reporduce, the perfect combination to satisfy recovering Southern growers short on money and labor. It's crazy that after reading this book how things click. Alfonso mangoes. Seedless fruit. Egyptian cotton. And so many other grocery staples now don't just mean what they are. They represent an observation, a discovery, a hunch of viability, actual viability and longevity. It's really incredible when you think about it. We owe so much of our culinary experience to one guy who's dedication sprung forth endless amounts of enterprise both large (guacamole, avocado toast, avocado everything for that matter!) and small (the kid next door's lemonade stand).<br />

The story of Fairchild and the lemon was so charming and totally one I can relate to: one for them and one (or two) for me. He loved the lemons so much that he was just eating them out of hand the entire journey after their discovery. I think it also represents him enjoying his passion. Savoring his discovery.<br />

So the above quote is why I included the lemon in my Floral Book Review of "The Food Explorer." It's an important reminder to enjoy your work. And as a reminder to be a little adventurous in your work, I chose those delicious dyed carnations for the arrangement. Variety may be the spice of the life but I think the secret might be enjoyment and adventure.<br />

So strawberry season is upon us.<br />
<br />
I was craving the cloud-like glory which is meringue.<br />
<br />
And thought why do lemons get to have all of the fun?<br />
<br />
They shouldn't!<br />
<br />
So I bring you Strawberry Meringue Pie. It's a curd-like base in that it's fruit, sugar, and egg yolks but minus the butter in this instance with my favorite topping (even more favorite than crumb!) meringue.<br />

<span style="font-size: large;">Strawberry Meringue Pie</span><br />
<span style="font-size: large;"><br /></span>
2 pound Fresh Strawberries<br />
1 cup sugar<br />
1/3 cup cornstarch<br />
4 egg yolks separated and the 4 whites for the meringue<br />
1 pie shell<br />
Squeeze of lemon optional<br />
<br />
For the Meringue<br />
4 egg whites<br />
1/2 tsp cream of tartar<br />
1/2 tsp vanilla extract<br />
then<br />
1/2 cup sugar added slowly<br />
<br />
How To:<br />
<br />
Slice strawberries into quarters and throw them in a pot. Cook until they start to break down and get juicy.<br />
<br />
Add in sugar and stir until dissolved. Add cornstarch and stir until there are no lumps or trace of the cornstarch.<br />
<br />
When you add the eggs you can do 1 of 2 things. Either let the strawberry mixture cool a little before adding them and stir continuously (seriously non-stop or you'll have scrambled eggs in your strawberry filling which is vomit worthy) or remove a cup of the mixture into a separate bowl. Add the eggs and stir until it's completely integrated and then add back to the pot with the rest of the strawberries.<br />
<br />
Once that's together you can start on your meringue.<br />
<br />
Add eggs, cream of tartar and vanilla extract to the bowl. With an electric mixer beat until the eggs are white and fluffy...at least a minute.<br />
<br />
Then slowly add the sugar. Beat until it's completely smooth and there is no grit from the sugar.<br />
<br />
Add the strawberry mixture to a pie shell and top with the meringue. Cook at 350 until the meringue is golden brown.<br />

In the past few years we have had quite a few people either come to work for us, express interest in eventually working for us, or reaching out with a number of questions after having taken an online class or reading a book.<br />
<br />
They definitely have a solid start as the online classes out there are incredibly well done. However there are two problems with online: 1. it's very easy to learn from the comfort of your couch in a climate controlled room and 2. it doesn't help with local sources of where to get the best stuff at the best price.<br />
<br />
So I created a 3 class series where you can come to 1, or 2, or all 3 if you'd like and get your hands dirty (or if it's raining maybe a little muddy) and dive in to where to source things locally....like plugs, potting soil, design supplies, etc.<br />
<br />
So the first two classes: Seeding and Transplanting and Harvesting, Mixed Bouquets and Sales Outlets are outdoor, rain or shine days. The third class option will be held inside in the comfort of air conditioning and in a bug free environment.<br />
<br />
And now for a few details about each class:<br />
<br />
Seeding and Transplanting: My mom will be joining us in the morning to talk all things greenhouse. She has over 30 years of commercial greenhouse production and has managed beyond 30,000 square feet of greenhouse space once upon a time. It's her domain and if you have a greenhouse question I feel pretty confident saying she has the answer. We rent greenhouse space off the farm so we will not be inside an actual greenhouse. We'll bring trays, soil, and other supplies to the farm to work with. In the afternoon we'll into field transplanting where we'll look at Black landscape fabric vs. black plastic, burn some holes, and put down black landscape fabric.<br />
<br />
Harvesting, Mixed Bouquets, and Sales Outlets: In the morning we'll pick all of the flowers we need for our afternoon mixed bouquets. We'll go over what to pick, what not to pick, how to properly bunch and tie bunches. In the afternoon we'll break up into groups and make some mixed bouquets followed by a Q and A about sales outlets.<br />
<br />
Hand Tied Bouquet and Centerpiece <b>(This class is for anyone who loves flowers! No professional aspirations needed)</b>: In the morning we'll go over a few different types of bouquets and tools used to make them. Each guest will then make a hand tied bouquet to take home. In the afternoon we'll repeat just with centerpieces. You'll get to take home your centerpiece and vase as well.<br />
<br />
These classes are meant to be fun and for people who are interested in flowers in general, gardening, or working toward professional cut flower production. This is NOT for experienced flower folks unless you're strictly a grower and want to dabble in design...then sure! join us for the design class. On the other side of that if you're a florist and are interested in growing flowers then come on down to 1 or both of the first two classes.<br />

My birthday happens to fall at the beginning of busy and the end of sleeping in on Saturdays as the farming season gears up. Before March 17th there's been some seeding but not a ton since we don't do any indoor growing. The work is still enough to where "to do" lists actually get done.<br />

Two years I ago I road tripped through New Mexico on my way from Phoenix, Arizona to Austin, Texas and I felt like I needed more time there.<br />

Strangely enough I think the highlight of my trip was stumbling a upon a flea market in Albuquerque and getting fruita picada (chopped fruit with chamoy, taji, lime and valentina hot sauce) and totally shocking the girl making it by speaking to her in Spanish. Why was that the highlight...well it was real. Real people doing what they do on a Sunday...gathering at the market to shop, catch up, and listen to music.<br />

I'm not into tourist type experiences and avoiding "tourist type experiences" in Santa Fe takes quite a bit of research and talking to people (like the guy working in Trader Joe's who I cornered until he divulged the best place to get real tacos).<br />

Speaking of NEW Mexican food (it's not Mexican food...different thing! and people in New Mexico will correct you!) I seized the opportunity to eat New Mexican Hatch Chiles at pretty much every meal.<br />
<br />
Since my trip two years ago we have been growing Chiles (but we never call them "Hatch Chiles" as we are not in Hatch, NM) and they are loved be military folks who have been stationed in NM, anyone who has visited NM and occasionally I can persuade my fellow, less traveled New Jersian to try them. But seriously you should try them because they are so damn good. There's a reason why they're the pride of an entire state!<br />
<br />
And yes, I went to Meow Wolf. It's the world's most popular art exhibit. The line to get in was literally INSANE. And why was it insane...well it was spring break in Texas. Fun fact for you...every single person in Texas (and I mean every single one...no man left behind!) goes to New Mexico for spring break. Who knew? It took almost 2 hours to make it in. Meow Wolf is wild and should be experienced. It's art re-imagined. Everything is meant to be touched. What could be further from a classic art exhibit experience?<br />

I also stopped at a Pistachio Farm which was fascinating. The MOST fascinating thing about the pistachio tree, to me at least, is that it doesn't reach full production until 20-25 years! Holy cow!!!! But you'll start getting some nuts at around 8 years. And these trees may be slow starters but can live up to 300 years. How incredible is that. McGinn's Pistachio farm was beautiful and had a super eye catching giant pistachio you could see from a distance. And even though they are literally in the middle of no where! They still had a constant crowd. Admirable!<br />

From pistachio's I trekked to White Sands which was definitely really neat! It was a weird day in that when I visited it was heavy on again off again rain storms so my trip was brief but still definitely worth stopping!<br />

In addition to the flea market, the other highlight of the trip is that I did all of the things I desperately want to do regularly at home but have a hard time doing with only a 24 hour day. I worked out 4 days and went hiking the rest. I ate breakfast. I watched an entire movie. I slept until 7 AM. I got completely caught up on all wedding quotes and emails.<br />

Glorious!<br />
<br />
To me vacation is the prime time to work out, catch up and nourish myself.<br />
<br />
Most importantly, post trip I feel recharged. I feel inspired.<br />
<br />
And my final take away from the trip....<br />
<br />
Sometimes (many times) it takes a trip to anywhere, in this case the "land of enchantment" to make home feel enchanting.<br />

I had the chance right before Christmas to go to a goal setting workshop hosted by one of my farmers market customers.<br />
<br />
Through out her goal workshop we were asked to pull out our theme for 2019 from what we had written down.<br />
<br />
For me creatively is the word that kept coming up.<br />
<br />
So 2019 you are the year of Creativity (and if you were curious also the year of the pig).<br />
<br />
Last year was a violent weather year. The farm flooded 3 times to the point where the irrigation (lay flat as it's called) was floating on the water. Crops were completely submerged in water. We lost a large portion of our tomato crop and almost all of our peppers.<br />
<br />
So when you have a more limited offering how do you keep your beloved customers excited for the next season? This is a question I rolled around prior to opening up enrollment for 2019.<br />
<br />
You get creative.<br />
<br />
I've been compiling a list of creative things to bring you fresh inspiration, interest and excitement around being part of our Market CSA.<br />
<br />
So here's a few things we're working on:<br />
<br />
More recipes. I have put together quite a few recipes over the years but there's a need for more. Especially on those harder to tackle items like escarole for example. I love escarole and I know you will too if you give it a try.<br />
<br />
Partnering with other vendors we love to have a few more things for you to pick up at the farmstand.<br />
<br />
Creating an interesting new flower concept.<br />
<br />
And trying to be more diverse in our offering by trying our very best to have beans this year (sadly deer love green beans as much as I do), more melon options, and a goal of having summer squash/zucchini available each week in August and September.<br />

This fascination was triggered by two things.<br />

1. By my many bi-lingual customers<br />
and<br />
2. The high school I work at during the winter has an English as a Second Language class<br />

He has thankfully passed the phase where he thought rocks might be a hardy snack. What can I say Peary experiences the world through this mouth.<br />

He, like you and I, wear a seat belt because when Peary saw people at the farm there's no way he could wait until the vehicle has come to a full and complete stop. No way! He needed to smother them in kisses and jumps so he leaped out the window in a single bound from the passenger seat to the driver side. (Disclaimer: he now wears his puppy seat belt at all times while in the car and he was completely unharmed and unapologetic about jumping out of a moving truck...I on the other hand was traumatized).<br />

He destroys so called "tough toys" in 23 hours from time of purchase.<br />
<br />
He sleeps on the top of the couch like a cat.<br />
He eats his food slowly through out the day like a cat.<br />

Butter.<br />

Butter has long been complimented. Has long be lauded and loved. My most vivid memories of butter involve my grandma Joan who taught my cousin and I the art of chocolate chip cookies which takes 2 sticks of butter. She also taught me the joy of a bit of butter on a melba toast cracker. Oh and lots of butter when cooking eggs. And butter when making rice crispy treats (a go to "home-made" dessert option).<br />
<br />
However even with it's grand goodness butter is so terribly every day...in the fridge and on the table. Khosrova says it best when she writes, "It [butter] is common after all. The girl next door, lovely but overlooked."<br />

I never stopped to contemplate butter's upbringing until I saw an Instagram account I follow reading this book. I immediately bought the book on impulse because I love butter. And if you love something you should be knowledgeable about the subject. Correct?<br />

Correct.<br />

I would first like to say this book was so perfectly written. Smart. Sharp. So even if you think the subject matter to be "that's interesting with a slight eye roll emoji" I encourage you to read it for the shear beauty of the writing....and the fact that you can entertain dinner party guests with all of your great new found butter knowledge.<br />
<br />
When we think of dairy we immediately think cow. No question. Maybe goat if you're a little more worldly...possibly sheep. But do we ever think camel, yak, water buffalo? Umm nope. But these Ruminant creatures are butter producers as well.<br />
<br />
"Ruminant milk varies as much as the mothers that produce it. A ewe (female sheep), for example will give milk twice the fat content of cow's milk; goats milk has fat molecules that are smaller and more digestible, but it lacks carotene so goat butter is white; milk from a yak has less milk sugar and more protein than a cow; camel's milk is similar to goat's milk in composition, but it can have up to three times as much vitamin C; and the milk of water buffalo has 100 percent more fat than a cow's milk."<br />

Butters beginings are thought to have come from either a bi-product of cheese making or that milk being stored in pouches being carried by animals started to ferment in the heat of the day coupled with the agitation of the animals walking...made the very first butter. <br />
<br />
Butter through out history found it's self as part of various spiritual rituals like: Tibetan butter sculpting, Sumarians gave regular butter offerings to Inanna, the goddess of fertility and the harvest, and Khosrova says, "Butter in sacred lore also turns up in the very first meal in the Bible."<br />
<br />
She poses an interesting question when she writes, "Remarkably, butter has held a heightened spiritual role throughout human history while simultaneously keeping its utiliarian place in everyday life. For as long as anyone can tell, butter has uniquely bridged the secular and the sacred, the scientific and the supernatural in vastly different cultures. Covering these dual narratives that stretch across time and place, I couldn't help but wonder, Why butter? Why did it become a global darling of both spirituality and domesticity?" <br />
<br />
In the beginning before modernized and mechanized dairy, milking was a woman's task. Milkmaids were solely responsible for maintaining the household and making all dairy products for the family to eat. Interesting the wealthy, who obviously had all of their dairy products made for them still wanted in on the experience by building "pleasure dairies" where they could "play" milkmaid. It's a little like U-Pick farms or farmer-for-a-day programs in current day.<br />
<br />
The first recorded student rebellion was actually over butter, the Great Butter Rebellion at Harvard University in 1766. Apparently the butter "stinketh!"<br />
<br />
The book also gave tribute to the queen of butter herself, Julia Child. "For decades Julia Child served as butter's best promoter, urging us to whisk, slather, spoon, and spread it to our healthy hearts content."<br />
<br />
Also discussed is the great margarine vs. butter battle. But lets be honest is there any reason to ever consumer margarine? No, nope, none. Khosrova inserted a great quote from Joan Gussow that says, "As for butter versus margarine, I trust cows more than a chemist."<br />
<br />
Butter had a few hiccups along its long journey to the present like the above mentioned margarine and then the low fat/no fat movement but there's no doubt butter will prevail. Butter is our favorite meal time guest. A welcome familiar face... an accountable quiet friend.<br />
