Fried Beet Salad


While I was transplanting lettuce this past Sunday I had lots of time to day dream about recipes and the great things to come...like Golden Beets!

I wasn't sure if these guys would become a reality since the seeds were on back order for so long.

Yellow Beets are more mild than their red cousin. I love them fried and generously sprinkled over a salad or just for snacking.


Fried Yellow Beets

Supplies:
1 bunch beets, peeled with vegetable peeler and sliced VERY thinly (I use a mandoline)
Olive oil
salt

After peeling and slicing the beets place them in a frying pan with the olive oil and fry baby fry! Cook until edges brown and they are crispy.  Remove from pan and place on a paper towel to absorb any extra oil.

Place beets over a salad of butterhead lettuce, chopped walnuts, a light vinaigrette - and your optional goat cheese.

  1. If you are so much conscious about your health then the salad is the ideal food for you and if you can add some beta specially yellow one then it might be the perfect meal for you for any reason.
