Ohhh chunky, chubby, fat asparagus doesn't get much love these days. And I just can't understand why!
Today while I was picking I singled out the largest spears I could find for my dinner. And not only do I find the presentation of them gorgeous....despite their size they are incredibly tender....oh and delicious!
For preparation I just washed and trimmed the ends.
Poured some olive oil over the top and roasted at 400 degrees until for tender (10 - 20 minutes).
At the very end sprinkle some Parmesan cheese over the asparagus and put it back in the oven for a minute or two.
And then you're ready to feast!
