Spring Onions with Roast Chicken


I really enjoy a good roast chicken and especially enjoy the fact that it feeds me for most of the week! The highlight of using the spring onions to accompany the roast chicken is chopping the green tops and sprinkling them over the chicken. They become crispy and delicious while the bottoms become tender and rich from the chicken broth.

I soften some real butter and rub it over the chicken. Sprinkle some salt. Pour in some water to the pan (or chicken broth if I have it on hand), The onions I simply washed and chopped.
