My favorite Side Item: Sweet Potato Fries

I am a french fry lover...come to think of it, I have never met a fry I didn't like.  However my favorite fries come in sweet potato form.  I love mashed sweet potatoes A LOT but there is something very satisfying about the crispy crunch of a fresh homemade fry.


And...they are so easy.

So here's what you do:

Grab a few sweet potatoes {adjust this to how many people you are feeding and if you want left overs}
Olive Oil
Corn Starch {this is not 100% necessary but it will help make a crisp fry...but if you are Paleo no need to use it}

Slice potatoes into fries.  Do not peel...the skin adds nice flavor.  Place 1-2 tablespoons of cornstarch in a large ziplock bag.  Place fry slices in bag and give it a good shake until they are lightly coated.  Remove from bag and place in a large bowl.  Drizzle with olive oil and toss until fries are covered with olive oil.  Spread fries on a baking sheet in a single layer, lined with parchment paper.  Bake until crispy...about 10 minutes at 350....and then Feast!
