Spicy Honey Sweetened Pineapple Jam


It's Pineapple season! That's right....peak season is March through July for this incredible fruit.

While browsing around the market I just couldn't say no to these two beauties.  These guys turned into the most wonderful sweet heat jam that was only sweetened with honey. I'm thinking this will make a killer glaze on some chicken....stay tuned for that. 


Spicy Honey Sweetened Pineapple Jam  

2 ripe pineapples (4 cups mashed fruit) 
3/4 cup honey
2 tsp Calcium Water
2 tsp Pamona's Pectin 
1/2 tsp cayenne pepper flakes
1/4 tsp ground hot pepper

Prepare jars and water bath canner. 

Chop off both ends of the pineapple, remove outside skin completely, and cut from the core.  Roughly chop and mash in a food processor.  Measure 4 cups of Pineapple, any that's left over....Pina Coladas perhaps?

Pour into a pot and turn up the heat.  Add calcium water and stir.  Bring to a boil. 

Mix honey and Pamona's pectin in a separate bowl completely.  Add to pineapple mixture.  Give it an aggressive stir until mixture returns to a boil.  Include pepper flakes and ground pepper.  Remove from heat. 

Ladle into sterilized hot jars leaving 1/4 headspace.  Remove air bubbles, wipe rims, and apply lids.  Process for 10 minutes.

Check to make sure lids hold tight after 24 hours.  If any don't, place jar in the refrigerator and enjoy jam asap.  

Use with in 1 year.
