Inspired to add a little fancy to my lunchtime salad and/or meat item I dabbled in quick pickled onions this afternoon. I had recently bought molasses to try out a recipe from a new pie cookbook I gifted to myself. Sadly, I haven't had time to make the pie {lots of potato and rhubarb planting, transplanting, and apple tree buying} but the molasses was staring at me on the counter.
So, I whipped up a batch of a sweet and sour onion pickles....
Sweet and Sour Quick Pickled Onions
3/4 cup apple cider vinegar
1/4 water
1 large red onion
2 tablespoons molasses
1/2 tsp yellow mustard seed
1/2 tsp kosher salt
Thinly slice your onion and set to the side. In a small pot combine vinegar, water, molasses, mustard and salt. Bring to a boil. Add onions and simmer for about a minute. Let cool completely and add to a jar or container and pop it in the refrigerator for 1 day and then enjoy!
