Hitting the Bull's Eye with Chioggia Beets












This past weekend at the farmers' market, I had a lot of questions about Chioggia beets. These guys just so happen to be the coolest beets around!

They are have a distinct bull's eye white swirl with a hot pink flesh - pretty fun if you ask me!

There is really no difference in flavor when compared to the red beet.  If you very thinly slice a raw chioggia with a madonline cutter they really add appeal to a salad.  I have also seen these beets julienned into little sticks which resemble candy canes - quite flashy!

Sadly when these beets are cooked they will loose their white swirl. 

Beets really are a feel good food.  They are cardiovascular friendly, have been shown to have anti-inflammatory effects, and are a good source of potassium.

If you not aren't exactly sure what to do with beets but can't wait to get your hands on a bunch of Chioggia's this week at the farmers' market look under the recipes tab or on Pinterest - I have a board designated to root vegetables.
